Begin your introduction to authentic Japanese cuisine with a short tour of a 90-year-old tofu shop. Rita talks you through the process of how tofu is made from soy beans and describes the variety of products that can be made from tofu (please note that you will not see the entire process of making tofu because the manufacturing starts early in the morning). Next, join Rita upstairs for your hands-on Japanese cooking class. Rita is passionate about sharing Washoku, the skills, knowledge and traditions involved in preparing traditional Japanese cuisine. She uses fresh, seasonal vegetables in her cooking to make delicious, well-balanced, and nutritious dishes. Learn to prepare and taste the unique ingredients and seasonings that form the foundation of Japanese cuisine. Learn to make dashi, the foundation of many Japanese dishes and use it as the base for your miso soup. Your cooking lesson with last about an hour and a half before you sit down together to enjoy the meal you helped prepared over fun conversation. You will go home with recipes in English for the dishes you learned, leaving you well-prepared to recreate a satisfying, authentic, and home cooked Japanese meal back home.
