Join a hands-on cooking experience at Masseria Stali, a traditional farm in the countryside near Lecce, and discover one of Salento’s most iconic foods: frisa.
Begin with an introduction to the masseria, its rural traditions and locally grown ingredients. Then step into the kitchen and take an active role: prepare the dough, shape your own traditional frisa, work with fresh ingredients and help create a menu inspired by Salento cuisine.
Traditional frisa requires long leavening and two separate baking stages over approximately 24–48 hours, so the final baking cycle cannot be completed during the three-hour class. Your hosts will explain every stage and show frisa prepared earlier, so you can understand the full process from fresh dough to the finished double-baked product.
After cooking, sit down for a dedicated table service and enjoy the dishes prepared during the experience, accompanied by fresh seasonal fruit, water and a glass of Masseria Stali wine.
A complete introduction to Salento food culture, combining practical participation, local ingredients and traditional knowledge.
