Overview

I am Enrique Montaño Oaxacan cook and I will take you first to the market to know some ingredients of Oaxacan cuisine, and there we choose the menu, we can find some dried chillies and toast them in the comal to prepare some mole or sauce. You will also learn the technique to make tortillas to accompany the meal.

I will share part of our traditions and on dates our food is consumed, both in a festivity or daily in which we enjoy a mezcal.

What to expect

We will learn for four hours part of the process of Oaxacan cuisine to prepare some mole, corn-based dishes or some other traditional dish that we Oaxacans consume every day.

Everything will be cooked in traditional utensils of the region (stone, mud and wood) in the heat of firewood. I'll show you the ingredients and I'll try to choose them, I'll also tell you occasionally we eat it and part of the rituals behind Oaxacan cuisine
