Overview

This experience focuses strictly on the agricultural heritage of the Sarapiquí lowlands by featuring rarely-served items like fresh, raw heart of palm and indigenous pejibaye, setting it apart from generic national food tours. It offers intimate private access by taking place entirely at the dining table of a local's private residence, providing an unfiltered look into everyday Costa Rican life away from commercial restaurants. Furthermore, the curated degustation format is specifically designed as a seated, multi-course tasting rather than a hands-on cooking class, allowing you to completely relax, eat, and listen without having to cook, which perfectly fills the gap for travelers returning from a morning of jungle hikes or rafting.

What to expect

This 2.5-hour intimate tasting session begins at your host's table, in a local home in Puerto viejo de Sarapiquí, where you will be welcomed with a classic Costa Rican Guaro Sour (sugarcane liquor cocktail) or a non-alcoholic Fresco de Piña y Jengibre (pineapple and ginger). As you sip, you'll learn about the region and the cultural context behind each item.

The tasting then moves into savory courses. You will start with warm, traditional Pejibaye, a filling, starchy local staple. Next, a fresh, raw Sarapiquí Heart of Palm (Palmito) served alongside golden, crispy patacones and savory frijoles arreglados.

Then we move to beloved Costa Rican comfort foods. You will be served Gallos de Picadillo de Chayote, savory local squash served over fresh, warm corn tortillas. Accompanied by hearty Enyucados, golden, savory cassava croquettes stuffed with seasoned beef, which perfectly portion the region's comforting flavors into practical, individual tasting bites.

Conclude with a cup of premium local coffee brewed right at your table using a traditional cloth filter (a chorreador) alongside caramelized plátanos maduros fritos (sweet fried plantains) for the perfect sweet finish.
