Market tour (30 minutes): learn about local, seasonally available spices and other ingredients and how they feature in regional cuisines across India as we gather what we need for the class. Cooking class (1–1.5 hours): we will demonstrate the techniques and recipes used to make your selected dishes (choose 3, plus chapati). Choose to focus on one regional cuisine or mix and match dishes from different regions. Try your hand at grinding masala pastes and rolling chapatis, among other techniques. Enjoy a cup of delicious masala chai as you learn. Enjoy your handcrafted meal (30 minutes to 1 hour): As you're eating, we'll show you traditional textiles originating from the same diverse cultures as the food we've prepared together.
