Overview

Mexico City was built directly on top of Tenochtitlan, stone by stone, the same way today's Mexican food was built on top of a 9,000-year-old corn tradition. This tour traces both layers at once, six stops through the historic center tasting how Indigenous, Spanish, and Lebanese influences all ended up on the same plate.

Taste a wedding mole made the traditional way, try wild-gathered insects, tacos al pastor sliced fresh off the spit, and pulque poured in the city's oldest surviving pulquería.

What to expect

  1. 35m · Admission ticket included
Begin at Fonda Mi Lupita, a tiny, family-run eatery tucked off Buen Tono street. Taste mole nupcial, wedding mole, a recipe combining two family traditions from the State of Mexico, made fresh every Monday in a giant clay pot, stirred entirely by hand.
  2. Mercado de San Juan
    1h · Admission ticket included
Walk into Mercado San Juan, a market that's operated on this exact spot since before the Spanish arrived. Taste four kinds of insects, wild-gathered by hand rather than farmed, then rim a glass of mezcal with worm salt for the toast.
  3. 40m · Admission ticket included
Step into a former convent whose cloister now houses Tacos Los Tacos. Watch tacos al pastor sliced straight off the spinning trompo, then share chilaquiles and a michelada at the table.
  4. 30m · Admission ticket included
Continue to Casa del Maíz, a business built entirely around traditional nixtamalization and native corn. Taste huitlacoche, a corn fungus treated as an agricultural disease in the US and prized as a delicacy in Mexico.
  5. 15m · Admission ticket included
Choose your own concha or pan dulce from the open shelves at Pastelería Madrid, a daily ritual across Mexico City.
  6. 30m · Admission ticket included
Finish at Pulquería La Risa, the oldest continuously operating pulquería in the Centro Histórico, open since 1903. Taste pulque, Mexico's oldest fermented drink, agave in the form people drank it a thousand years before anyone learned to distill it into mezcal.
