This is a hands-on paella cooking class on a private rooftop in the heart of Seville, a few steps from the Cathedral. The class ends with a shared meal on the terrace, the Giralda in view. Many evening sessions are timed around sunset, depending on the season.
You meet your host at Las Columnas on Calle Mármoles and walk up together. A welcome drink and local appetizers start the evening while the group gets to know each other.
Then everyone cooks. Your host, a Seville local and chef, walks you through a traditional Valencian chicken and vegetable paella step by step: the sofrito, the rice, the broth and the socarrat. While the rice cooks, ask anything about Seville; you'll leave with a list of places locals actually go.
The meal is the paella you made, with handcrafted sangria. You take home the paella and sangria recipes and a small gift. About 90 minutes, 10 guests at most, in English.
