Traditionally roasted with fruitwood, this duck has a subtle fruity aroma and ultra-crispy skin.
The duck is served in three ways to utilize every part: first, its boneless, flavorful meat is paired with green onions, sweet-savory dressing, and thin crepes (roll them up to eat); second, less-meaty parts are stir-fried with garlic, chilies, or ginger; third, bones and remaining meat are simmered with cabbage into light soup.
